Quick and Easy Vegan Pasta Bake


Whilst we love a jackfruit taco extravaganza, a tangy fragrant pho or an expertly crafted vegan sushi platter - sometimes even we forget just how incredible the simplest of recipes can taste! A comforting dish has the ability to conjure up feelings of warmth, nostalgia and most importantly inspire the good old happy-tummy dance. And we couldn’t think of a better example than a good old pasta bake. Made by your mum when you were younger or cooked up as a people pleaser when feeding a gathering of hungry friends/family, the pasta bake is an absolute classic in most of our homes.

So inspired by our own cravings for a little bit of nostalgic comfort food, we whipped up this beauty of a pasta bake using our rich mushroom bolognese and a few added extras. Not only does it taste YUM it can also be made in around 20 minutes. Happy days.


Serves: 2

Time: 20 mins


1 x Brook Mushroom Bolognese

300g pasta (we used rigatoni but go whatever you fancy)

200g vegan hard cheese, grated.

Oregano/ fresh basil/parsley to serve

*Got some veggies that need using up? Why not roast them and throw them into the pasta bake mix too.

Like it hot? Shake some smokey chipotle tabasco or add some chili flakes onto the cheesy topping.



There’s a few ways to go about this….and it entirely depends on how much time you have. You could microwave the mix with the cheese on top for your own personal bake OR cook it in a dish in the oven so whichever way you go for adapt the method.

Preheat oven to 180c (if using).

Lightly grease a small baking tray and put to one side.

Defrost your Brook bolognese either overnight or in the oven/ microwave according to packet instructions.

Meanwhile cook your chosen pasta on the hob in a saucepan of boiling water until your ideal softness.

Once cooked, drain the water and leave the cooked pasta in the saucepan.

Add your defrosted bolognese and any other extras into the saucepan and stir it through with the pasta.

Place the mixture into the baking tray and top with the grated cheese - how much? well that’s up to you cheese fiends. Season to taste.

Place in the oven for 10 minutes or until the cheese is melted and golden on top.

If using a microwave… place a plate/ bowl over the baking tray and cook in the microwave for approx 3 minutes.

Remove from the oven/ microwave and divide the bake into two.

Serve with dried/ fresh herbs of choice and any other naughty toppings.

Grab a fork and dig in! Mmmmmmmm.
